1/2 cup unsalted butter, at room temperature

1 cup packed light brown sugar

1 large egg

3/4 cup mashed ripe bananas (about 2 medium)

1 1/2 teaspoons pure vanilla extract

1 cup all-purpose flour

1 tsp baking soda

1 teaspoon salt

2 tsp ground cinnamon

3 1/4 cup old fashioned oats


Preheat oven to 350°F. Line baking sheets with parchment paper.

Scrape down the sides of the bowl and then mix in the egg until completely incorporated. Scrape the sides of the bowl again and add in the mashed bananas and vanilla.

Gradually add the the flour mixture to the banana mixture and blend until just blended.

Scrape down the sides of the bowl and stir to recombine.

Use a medium cookie scoop (approximately 1.5 tablespoons) to scoop the dough on prepared cookie sheets leaving about two inches between each cookie.

Bake in preheated oven for about 9-11 minutes.

Remove cookies from the oven and gently press on the tops of each cookie using the bottom of a drinking glass. Because these cookies don't spread considerably, this can give them a traditional cookie shape.
